Recipe for Jicama Corn Salad
The following recipe creates enough salad to serve about eight people and the flavors of corn, mango, onion, and jicama are combined with lime juice and cilantro for flavor. Jicama is a crunchy, sweet white root vegetable. If you cannot find it, you can substitute turnip.

You will need:
• 2 lbs peeled, diced jicama
• 4 cups thawed corn kernels
• 1/2 cup lime juice
• 1/2 cup chopped fresh cilantro
• 4 peeled, de-seeded, diced mangos
• 1 cup chopped red onion
• Salt and black pepper, to taste
How to make it:
Mix the red onion, mango, corn, cilantro and jicama, then pour the lime juice over the mixture, add some salt and pepper and toss well. Serve this salad chilled. It will keep for a day or two in the refrigerator.
